Everyone knows that the region Marche is made of beautiful landscapes and amazing food, especially because of its strong agricultural and farming traditions. Among the typical and local dishes of the Vallesina, there is the Belvedere Ostrense’s Salamora, a dressing made of new extra virgin olive oil, seasoned for one month with wild fennel, orange peel and garlic. It is used as seasoning for stuffed rabbit (“coniglio in porchetta”), but also for “bruschetta”: an astonishing pleasure for your taste.

Belvedere Ostrense is a municipality located in the province of Ancona, upon the amazing valleys of river Esino, with few more than 2000 inhabitants. The city has a medieval origin, though its name comes from ancient Roman families coming from Ostia (the adjective being “Ostrense”) who funded the city. The city id now surrounded by Renaissance city walls and there are some interesting religious buildings for their architectural features, well worth a visit such as the San Pietro Church and the Sanctuary of Madonna del Sole. The International Museum of Post and the Celebration of Madonna del Sole in May deserve a visit.
Belvedere Ostrense’s Salamora is a typical product of local agricultural tradition, it is usually prepared during Autumn, and especially in November, and in the past it used to be the seasoning for celebration days or special occasions.
